Description
準備材料
紐西蘭羊扒 300克(約2-3件,連骨)

海鹽 適量

黑胡椒 適量

橄欖油 1湯匙

牛油 20克

蒜頭 4瓣(連皮拍扁)

迷迭香 2條(新鮮或乾均可)

步驟
解凍與回溫
羊扒提前一晚放雪櫃下格慢解凍。煮前半小時取出,室溫回溫,用廚房紙吸乾表面水分。

調味
兩面均勻撒上海鹽和黑胡椒,輕輕按壓讓調味黏附。醃10分鐘。

煎羊扒

大火燒熱平底鑊,落橄欖油,燒至出白煙。

放入羊扒(有脂肪的一邊先向下),每面煎1.5分鐘至金黃焦脆。

較厚身嘅側邊都要煎30秒。

加香料與牛油
轉中火,加入牛油、蒜頭、迷迭香。用匙羹將溶化牛油不停淋上羊扒表面,每面淋約1分鐘。

靜止休息
將羊扒夾起,放上鐵架或碟上,靜止5分鐘(呢步令肉汁重新分佈,唔會一切就流失)。

上碟
沿骨位切開成一件件,淋上鑊中剩餘嘅香草牛油汁。可配烤蔬菜或薯蓉。
