烹調方便　簡易無比
1. 將肉扒自然解凍後,用廚房紙將牛扒印乾
2. 烹調前,以少許鹽及黑椒簡單調味
3. 在平底鍋裡放一點油或牛油,燒熱後放入牛扒,2面分別中火煎約 1.5 分鐘 (5成熟),以封肉汁

西冷的脂肪與肉質比例非常均勻,比起肉眼脂肪會較少,不會太肥膩,幼嫩中帶少許咬口,牛肉味道香濃。西泠肉質較適宜五成熟(Medium) 到七成熟(Medium Well) 之間最能帶出西冷的美味和豐富的口感。美國IBP CAB 安格斯西冷取自牛隻的上腰部的脊肉,口感豐富,肉質厚實,肉味較一般牛隻部分濃郁,味道香濃,肉色呈現一種櫻桃般的色澤,輕煎來吃,已經肉香撲鼻,完美脂肪比例,牛味香濃。美國IBP CAB 安格斯西冷榮獲美國農業部CAB認證,保證其肉質細嫩,牛味濃郁。據說亨利八世在品嚐了西冷後,把它封為「牛扒爵士」！檢定安格斯牛肉(Certified Angus Beef),簡稱CAB,是美國安格斯牛肉協會(American Angus Association)於1978年成立至今的檢定安格斯牛肉專案計畫,用來行銷並確保具有黑色血統特徵肉牛(安格斯牛)所產出的高水準牛肉。
